Parmesan Crusted Chicken Breast – only four ingredients to make delicious, juicy chicken! My kind of recipe!
I took a couple of chicken breasts out of the freezer the other night that I was going to grill. Those that know me, know that grill is my favorite way to cook. Lately though, I’m trying to add some pizazz to my cooking so I decided to go to my new favorite cookbook, Pinterest. I have found so many recipes that I want to try and added them to Pinterest boards. This is my Pinterest page with all of the boards that I created. If you look toward the bottom, you will find my recipe boards. Since I’ve gone to the trouble of making those boards and saving the pins, I thought I’d find a recipe that looked yummy and give it try. Turns out they ALL look pretty yummy – that’s why I saved them! This recipe caught my eye because it not only looked good but contained those magic words (at least to me) – EASY!
I found this recipe in my poultry board. It calls for four breasts and there are only two of us so I cut the recipe in half. The original pin came from The Enchanted Cook site and she got it from the Hellmann’s mayo folks. That’s the way Pinterest works. Someday, someone may come along and pin this recipe from my site because they have never seen it anywhere else.
When I decide to try a recipe from any source, I make it directly from the source the first time. If it’s a keeper and I know that I will want to make again, I use my favorite iPhone/iPad app to save it so that it will be easily accessible the next time that I want it. My favorite recipe management app is Paprika. It is available for IOS and Android products. It features automatic cloud syncing so that I can use the recipe with any of my devices. It is handy on the iPhone when I am in the grocery store and want to check the ingredients that are needed. It is easy to clip online recipes and it makes a grocery list of products needed. I highly recommend this app.
Back to the recipe. I am posting the recipe for four as it originally called for. It is easy to cut in half if you are cooking for two. Let me know if you gave it a try and if you like it as much as we do!
- ½ cup Hellmann's® Mayonnaise
- ¼ cup Parmesan cheese
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
- Preheat oven to 425°.
- Combine Hellmann's® Mayonnaise with cheese in medium bowl.
- Arrange chicken on baking sheet.
- Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked & juices run clear.
