The Japanese version of the fiddlehead is indeed the Bracken fern.  The one in Maine is the Ostrich fern, which has not been linked to stomach cancer.

You can find them pickled in most Japanese and Korean markets where they are labelled &quot;Fernbracken&quot; in English (what an appetizing name!). 

There are several studies being done in Japan about links between &quot;pickled fernbracken&quot; and stomach cancer because there are higher incidences of that cancer there than in other parts of the world. But it might be the pickling, and not the fiddlehead itself that causes the cancer. Plus people there eat a lot of fiddleheads all year round.
